Instructor: Lamia Mrabet was born and raised in Tangier, Morocco. Mrabet has always been surrounded by the delicious aroma of Mediterranean cuisine. Naturally, this led to an interest in cooking and experimenting with different flavors at a very young age. When Mrabet eventually left Tangier and came to the US, she was astonished by the near nonexistence of authentic Moroccan flavors and decided to take it upon herself to share this beauty with the American people. Mrabet started her own Moroccan spice company in 2019 under the alias, The Queen of Spice.

For the first course, you will learn how to prepare a healthy and refreshing Fattoush Salad, featuring a combination or sweet and tangy flavors, a bright, minty dressing, crunchy textures of fresh veggies, and crisp pita chips. Then, you will learn how to make Mahashi or stuffed vegetables with rice and ground beef (vegan option available at registration), a festive and delicious dish that is great for parties and family gatherings. For dessert, you will learn how to prepare Qamar Al-deen juice, a thick, sweet and delicious dried apricot-based drink. Registration closes Nov 17.
